Who is Miss Claude?

Bonjour,

I grew up in the beautiful region of Normandy, famous for its apples and Calvados.  My passion was gymnastics and I became a physical education teacher after studying at a well-respected school in Montmartre close to the famous Moulin Rouge in Paris.

I was born with an adventurous spirit and later, in 1971, I packed up my four little children and two large trunks and left Paris for Australia. The adventure began when we landed in Melbourne and with the trunks tied to the roof of a Morris 1500, we set off for Sydney. The trip along the dry and dusty countryside, very different to my homeland, was a disaster.  Bouncing over a big bump in the road caused the trunks to fly off the car into a ditch. We were rescued by a farmer who put our scattered belongings into the back of his ute and, Voila! … disappeared down the road, a trail of dust behind him! With much alarm we took off after him following the dusty cloud.  Arriving at Yass, there was our farmer standing by the Border sign, a big grin on his face, saying, "What took you so long?"  This was my introduction to Australian humour. I loved it!

Our love of the sun and beaches made for more adventures and after a few years we headed off again. This time to beautiful Queensland where I have now lived for over forty years. It is my home and in my heart.

Over the years many people have asked, "Claude, what did you bring in those two trunks to start a new life? Cooking utensils? Cookbooks with your famous crepe recipe?" I tell them I brought clothes and some precious books that belonged to my grandfather. My Mother's special recipe, which she used to make crepes when I was a little girl, was in my head.

I have always made crepes for my children and grandchildren. They are what connects me to France, and now my family is making them to share with those I think of as My Very Big Australian Family.  How wonderful is that?

Bon Appetit !!!

Miss Claude xoxo

The Miss Claudes Experience

Light, soft and wafer-thin, Miss Claudes Crepes delivers the delectable heritage of traditional French crepes in every bite. Established in 2013, Miss Claudes Crepes has amassed a loyal coterie of crepe connoisseurs since its debut at Eagle Farm Markets and Eat Street through to the current dine-in locations at Newmarket on Brisbane’s northside and Coomera on the Gold Coast.

Miss Claudes Crepes follows a secret fourth-generation family recipe that French-born chef-owner Naima Knudson brought to Australia. Named for Naima’s mother (the eponymous Miss Claude), the family-run creperie offers Normandy-style crepes in an array of sweet, savoury and breakfast options, including gluten-free and vegan.

While the most popular crepe is the Nutella Combo 1 (formerly named the “Moulin Rouge”) – a sweet confection of crepes topped with banana, strawberries and vanilla ice-cream drizzled with choc-hazelnut spread – Miss Claudes is more than a dessert destination. The secret batter, fresh seasonal ingredients and inspired toppings all make for consistently great sweet and savoury crepes that attract diners from far and wide.

The beauty of a crepe is that it is perfect at ANY time of the day - for breakfast, lunch, dinner, dessert or just as a snack - in both sweet and savoury varieties - so there’s something for everyone!
